Should I sand or use stripping agent on bathroom cabinets or both?

Want to remove and update the 1970′s stain with a more updated mahogany color. I have heard both and unsure. What stripping agent is best for non-ventilated bathroom? Thanks.
The cabinets have not been painted previously but have a wood stain. Sounds like stain removers should only be used for removing layers of paint off wood?
